Since our inaugural edition in 2023, this series has strived to capture the rapidly evolving pulse of the hospitality and tourism sectors. The overwhelming interest and demand we received for this year’s edition is a testament not only to the vibrancy of our field but also to the urgent need for scholarly work that bridges the gap between tradition and modernity, science and culture.

The landscape of global gastronomy is shifting. We are witnessing a dual phenomenon: a rapid, technology-driven transformation of management and service on one side, and a fierce protection of intangible cultural heritage on the other.
